Using a hand blender or a small food processor, combine all ingredients (excluding parsley) until smooth and creamy.
Pour dressing into a small bowl. Optional: top dressing with fresh parsley and blue cheese crumbles for garnish.
Cover and refrigerate leftovers. Lasts about 3-5 days. Great for dipping buffalo chicken wings, on top of buffalo chicken enchiladas, drizzling on salads, and dipping veggies!
